Louisiana Crawfish Boil Recipe

To my Cookies that aren’t familiar with Cajun cuisine, allow me to introduce you to a delicacy here in Louisiana. The Crawfish. Nothing gathers people together more than a good ole Crawfish Boil down here! Listen, this little red suckers bring a different kind of joy to our hearts! I can’t even explain the taste. But, let me try…It’s kind of like a mini lobster with 100x more flavor! Of course, everyone here has their own way of boiling. You already know I had to come up with the easiest method that also has the most flavor! Here’s how I prepare my Crawfish Boil and bless my folks!

Clean ‘Em Up!

Your sack of crawfish are going to be dirty! Don’t be alarmed. They come from the swamp. So, a little dirt is expected. We pour them into large cooler and place the water hose inside it. Then, open the drainage hole. Allow the water to run for about 20 minutes or until the water in the cooler is clean.

You should be able to see the crawfish clearly. You also want to remove any dead crawfish you see floating around. If their tails are straight, they’ve gone to glory. Toss ‘em! You definitely do not want to eat a crawfish that gave up the ghost before hitting that hot water. Gross!

When filling your boiling pot with water, make sure you fill it about 2-3 inches above the half way mark.

Just Right!

You guys know I’m a flavor girl. I worked extra hard making sure these crawdaddies were seasoned to perfection. You want them to have the right amount of kick. If they’re too spicy, it’s hard to enjoy them. You want them jusssssst right! You know, like Goldilocks ole breaking and entering behind. Anyway, I like to season well! I use a mix of both Zatarain’s and Louisiana Fish Fry Products boil seasonings. Both are brands will incredible flavor! I also add one, 8 ounce bottle of liquid boil. The Garlic & Onion flavor is a tad bit less spicy than the original concentrate. It adds just the right amount of kick. If you like extra, EXTRA spicy crawfish, add another bottle.

I know what you’re thinking. “Coop, what the hell?” But, listen, you know if I don’t know anything else, I know how to add flavor to some food, okay? So, trust me on this. Do NOT skip this chicken bouillon!! Also, don’t skip the butter. Because, well, butter makes every damn thing good!

And don’t be shy with the veggies and citrus. They bring so much more out of the boil! And a secret, must have ingredient: vinegar. Plain, white, distilled vinegar. A cup will do. This makes the crawfish shells easier to peel. It also calms the smell. The scent of crawfish can linger on your fingers long after washing your hands. This little splash of vinegar takes care of that! You can even eat them inside of your house without worrying about stinking up your walls and furniture. Thank God for vinegar!

Cool Off, Cool Off

The most important part of the boil, other than choosing the right amount of seasoning, is the cooling/soaking process. Crawfish boils super fast! Within 5 minutes, they will be beautifully red and floating at the top of the pot. This is when you need to drop that temperature. 150°F is ideal for soaking. Adding in frozen corn and sausages helps. But, you need to do more to drop the temperature fast enough. If not, the crawfish will overcook and become a mush. Some like to add ice. I don’t recommend that because ice can dilute the boil and take away some of the flavor we worked so hard to build. I use the Boil Boss! It is said that when the crawfish sinks to the bottom of the pot, it has sucked in as much flavor as possible. But, I find that the longer you soak, the spicier they become. So, taste as you soak. I soaked for about 40 minutes. Since the Boil Boss drooped the temp, I didn’t have to worry about my crawfish overcooking. It allotted them plenty of extra soaking time. 

I was intimidated about boiling crawfish. But, there’s nothing to it! Just follow my instructions and watch the video until you’re ready to confidently tackle your first boil. You can do it! And just look at the reward!!

The Best Crawfish Boil Recipe

A good, ole Louisiana Crawfish Boil how-to including the recipe for the most flavorful boil you’ll ever enjoy!

Ingredients

  • 30-40 lbs live crawfish
  • 2.5 lbs Zatarain’s Crawfish Shrimp, and Crab Boil Complete
  • 2 lbs Louisiana Crawfish Shrimp, and Crab Boil
  • 8 oz Zatarain’s liquid Shrimp & Crab Boil Garlic & Onion flavor
  • 1 cup distilled vinegar
  • 7-8 oz powdered chicken bouillon
  • 1 cup kosher salt
  • 3 onions
  • 3 bell peppers
  • 4 celery stalks
  • 3 garlic pods
  • 3 oranges
  • 3-4 lemons
  • 1 stick salted butter
  • Boiling potatoes
  • Frozen corn
  • Sausage frozen or thawed

Instructions

  1. Pour crawfish into a large cooler with a drainage hole
  2. Place water hose into cooler and run water into the cooler with the drainage hole opened.
  3. Remove any dead crawfish (if the tails are straight, they’re gone!)
  4. Continue until the water in the cooler is clear
  5. Turn on the fire and place the boiling pot on top
  6. Fill the pot with water until it is 2-3 inches over halfway full.
  7. And in the Zatarain’s seasoning (both powder and liquid), the Louisiana seasoning, chicken bouillon, salt, and vinegar.

  8. Stir well.
  9. Place the holed, steamer insert into the pot
  10. Add in the veggies
  11. Squeeze the juice from the oranges and lemons before toss them into the pot.
  12. Add the butter and stir well.
  13. Cover the pot with the lid to encourage the boil
  14. Once boiling, add on the potatoes
  15. Stir, cover with the lid, and allow to boil for 10 minutes.
  16. Carefully remove the steamer insert
  17. Pour crawfish into the insert on top of the potatoes.
  18. Carefully place insert back into the pot.
  19. Cover with a lid and boil the crawfish for 5-7 minutes
  20. Turn the fire off.
  21. Add in frozen corn and/or sausage to help cool the boil.
  22. Stir until the temp inside the pot has lowered to 150°F *see video and info above for instructions*
  23. Cover and allow the crawfish to soak for at least 30 minutes; or until the corn and sausage is done, and the majority of the crawfish has sunk to the bottom of the pot**
  24. Remove the steamer insert and allow it to drain.
  25. Enjoy!

BBQ Shrimp over Cajun Catfish


I’m not a fan of cooking. I know, I know. Why would I have a whole recipe blog if I don’t really like cooking? Hey, you guys have to eat, right? And I love the creativity part of developing recipes. Anyway, I said that just to emphasize how much of a treat it is to have dinner prepared for me. I love visiting restaurants. Especially new ones. I’m always inspired by dishes on the menu. That is where the idea for this dish came from.

I’m using catfish in this recipe. But, honestly, you can use any fish of your choice. Catfish just so happens to be my favorite! I think it’s a Louisiana thing.

There is no BBQ sauce in this recipe. I know the name can’t be off putting to some. Especially those outside of the South. And I must warn you. This isn’t a mild dish! There is some heat! But, it isn’t overwhelming. It’s also butter based. Heat and butter! Match made in taste bud heaven!

Be careful not to over cook the shrimp. Once they plump up, they’re done! It only takes a couple of minutes!

I serve this combo over creamy mashed potatoes! Throw in a salad and/or some veggies and you’ll have a meal your family will ask for frequently! Make enough for leftovers! It’s even better the next day.

BBQ Shrimp over Cajun Catfish

Prep Time 5 minutes

Ingredients

Catfish

  • 4 catfish fillets
  • 1-2 TBS Creole or Cajun seasoning
  • 1 TBS cracked black pepper
  • 2 TBS unsalted butter
  • 1 T olive oil

BBQ Shrimp

  • 2-3 pounds XL raw shrimp
  • 1 stick unsalted butter NOT margarine
  • 1/4 cup Worcestershire sauce
  • BBQ Shrimp seasoning recipe below
  • 1 TBS minced garlic

BBQ Shrimp Seasoning

  • 1 TBS Zatarain’s creole seasoning
  • 1 TBS onion powder
  • 1 TBS garlic powder
  • 1 TBS dried thyme
  • 2 tsp oregano
  • 2 tsp red pepper flakes
  • 1 tsp cayenne pepper
  • 1 tsp lemon pepper

Instructions

BBQ Shrimp Seasoning

  1. Mix all spices together in a small bowl.

Catfish

  1. Seasoning both sides of each fillet with the Creole/Cajun seasoning and black pepper
  2. Pour the oil and butter into a skillet
  3. Melt the butter on medium high heat setting.
  4. When the butter melts, add in the catfish
  5. Allow the fish to cook for 3-4 minutes per side.
  6. Remove from the pan
  7. Set aside.

BBQ Shrimp

  1. In the same pan, add the butter.
  2. When the butter melts, stir in the Worcestershire sauce, BBQ Shrimp seasoning, and garlic.
  3. Add in the shrimp.
  4. Allow the shrimp to cook for 1-2 minutes per side.
  5. Stir well.
  6. Serve the BBQ Shrimp over the catfish with mashed potatoes
  7. Enjoy.

Air Fryer Whole Chicken |Cajun Butter Chicken

I can’t even tell you how many times I’ve been on the supermarket with zero intentions of buying a rotisserie chicken. But, the smell is irresistible! And I leave with a hot and ready bird everything time. Imagine my excitement upon discovering that I could prepare that same style of chicken at home in my air fryer! Of course, I wouldn’t be Coop if I didn’t make it Cajun style! No worries. It’s not spicy at all. 

My air fryer is 5.8 quarts. I try to find a chicken between 3-4 lbs. Although a 5 lb chicken would fit, I find that it’s more difficult to handle. a larger chicken would also increase the cooking time, due to the injected marinade and weight.

There are many inject able marinades on the shelf. But, this brand is my absolute favorite! The flavor is intense without being salty. It’s magical. You can use the entire jar and marinate it overnight without worrying about the chicken being overly salted. 

Since the marinade is light on sodium, I can add more spices. My spice blend has just the right amount of everything! The skin of rotisserie chicken is a highlight for me. And this blend of spices compliment it perfectly. 

I also use a little bit of the spice mix in some softened butter. This goes under the breast skin of the chicken. White meat of the chicken can be the driest part. This step, along with the marinade, helps ensure that, that won’t happen. 

50 minutes produces the perfect whole chicken for me. But, air fryers are different. Be sure to keep an eye on the chicken. This is why a meat thermometer is necessary. Stop and check it often to ensure that it isn’t burning or browning too quickly. If the breasts are browning before the chicken is cooked through, cover the breasts with a piece of foil and continue air frying. 

It’s very important to allow the chicken resting time before serving. This will settle those juices. However, this marinade is serious! Even after resting, the juices may spray out when carving the chicken. It’s a good thing! Just warning you before it can be a shock.

Air Fryer Whole Chicken | Cajun Butter Chicken

Prep Time 12 hours
Cook Time 50 minutes
Servings 5 people

Ingredients

  • 3-4 lb whole chicken
  • 16 oz jar Louisiana Cajun Butter Injectable Marinade
  • 2 TBS Chef Paul poultry seasoning or use your favorite
  • 1 TBS onion powder
  • 1 TBS garlic powder
  • 1 tsp lemon pepper
  • 2 TBS softened butter

Instructions

  1. Rinse chicken with water and pat dry with paper towels
  2. Inject each part of the chicken with one full syringe of the Cajun Butter marinade.
  3. Place chicken in a marinading bag or freezer bag and pour the remaining marinade over the chicken
  4. Marinate in the refrigerator for at least 8 hours or overnight
  5. Combine spices in a small bowl
  6. Mix 1 tsp of the spice mixture with the softened butter
  7. Remove the chicken from the bag
  8. Sprinkle the remaining spices evenly over the entire chicken
  9. Rub the butter mixture under the skin of the breasts of the chicken.
  10. Preheat the air fryer to 320 F
  11. Spray the basket with non stick cooking spray
  12. Place the chicken into the basket, breast side down.
  13. Air fry for 30 mins.
  14. Flip the chicken over and air fry for an additional 20 mins or until a meat thermometer registers 170 F
  15. Allow chicken to rest for 10 minutes before carving.
  16. Enjoy!

Cajun Fried Turkey Wings Recipe

Whew, Chile! I keep getting requests for a fried turkey recipe. You guys trust me more than I trust me! Baby, I’m not ready to fry a whole bird! I need adult supervision with grease! BUT, I will give you the BEST Cajun Fried Turkey Wings Recipe!


I searched every grocery store in my area for whole turkey wings. They were all sold out! I had to settle for the already cut wings. And, I can’t complain. I just rinsed them really well and pat them dry.

Just as I would with a whole turkey, I’m shooting this sucker up with the GOOD stuff! So much flavor in this litte jar!

I like to marinate my wings overnight. But, if you’re short on time, give them at least 4 hours to soak in the flavor.

Using a deep fryer or pan, fry the wings for 7 minutes on one side. Then, flip them over and fry for an additional 7 minutes or until the wings are COMPLETELY cooked.

My Cajun Fried Turkey Wings are the perfect substitution for a whole fried turkey. You may even enjoy these over fried chicken. Yes, they are THAT good!

Cajun Fried Turkey Wings Recipe

Fail proof recipe for Crispy Fried Turkey Wings with a Cajun kick!
Prep Time 12 hours
Cook Time 30 minutes

Ingredients

  • 4-6 turkey wings
  • 4-6 ounces Creole Butter injectable marinade
  • 1-2 T hot sauce
  • 2 1/2 T Cajun or Creole seasoning
  • 1 T onion powder
  • 1 T garlic powder
  • 1/2 tsp Goya Sazon seasoning optional
  • 1 tsp black pepper
  • Vegetable or canola oil for frying

Instructions

  1. Inject 1 ounce of marinade into the meat of each turkey wing
  2. Place wings into a freezer bag and refrigerate overnight or at least 4 hours.
  3. Mix all spices together
  4. Sprinkle and rub the spice blend evenly over the wings
  5. Preheat oven to 425 degrees F
  6. Place wings on a baking sheet with a wired rack
  7. Bake uncovered for 25 minutes
  8. In a deep fryer or pan, heat enough oil to cover the wings to 350 F
  9. Deep fry the wings until brown and cooked through to an internal temp of 165 degrees F; about 3-5 mins depending on the size of the wings
  10. Drain on paper towels
  11. Enjoy!

Cajun Lobster Tail

I like to be fake fancy sometimes. So, when one of my Cookies requested a lobster tail tutorial I was more than happy to do so. Especially since it’s so easy to do! And, you already know, I wouldn’t be Coop if I didn’t make it Cajun style! 

The rule is to bake the lobster for 1 1/2 mins per ounce. My lobster was only for 4 ounces. 10 minutes on 375 was perfect. DO NOT OVERCOOK! Rubbery seafood is the worst! And lobster isn’t cheap, so don’t waste it.

Be careful with cutting the shell and separating the meat from the shell. Lobster shells can be sharp. Please don’t cut yourself! Also, don’t cut the “fan” part of the lobster or the shell under the meat. We just want to cut the shell that’s on top of the tail meat. Then, carefully lift the meat from the shell, press the bottom shell together, and lay the meat on top. Cute and fancy! 

If you prefer a milder flavor, just use salt and paprika for the seasoning. However, I HIGHLY recommend trying it my way. To me, lobster can be sometimes boring in taste. The Cajun seasoning was a perfect awakening for it. Try it!

The garlic butter I use already contains lemon, dill, parsley, and, of course, garlic. Saved me soooo much time! But, if you can’t find it in stores, I have the recipe for it below.

Lobster
  1. 1 raw lobster tail
  2. 1 T olive oil
  3. 1-2 tsp Cajun seasoning
  4. 1/2 tsp paprika
  5. 1 T garlic butter (recipe below)
Garlic Butter
  1. 1 stick unsalted butter (softened at room temp)
  2. 1 T minced garlic
  3. 1 tsp chopped parsley
  4. 1/2 tsp black pepper
  5. 1/2 tsp lemon juice
  6. 1/4 tsp dill
Lobster
  1. Preheat oven to 375 degrees F
  2. Using kitchen shears or scissors, carefully cut vertically down the center of the lobster tail until you reach the last horizontal line before the "fanned" part of the tail
  3. Gently, separate the meat from the shell in a lifting motion. Do not pull it from the fanned end of the tail.
  4. Press the shell together and lay the meat on top of the shell.
  5. Brush the meat with olive oil
  6. Sprinkle the Cajun seasoning and paprika on the meat evenly
  7. Place into a parchment paper or foil lined baking dish and bake on the center rack for 1 1/2 mins per ounce of the lobster tail. (i.e. a 4 oz tail will bake for 6 mins.)
  8. Remove the tail from the oven
  9. Spread the garlic butter on the meat
  10. Place it back onto the center rack of the oven
  11. Broil it on high for 2-3 mins.
  12. Enjoy!
Garlic Butter
  1. Place all ingredients into a food processor. (You can also stir it by hand in a bowl.)
  2. Blend well.
  3. Spoon butter in between plastic wrap and mold into desired shape. Or store in a tightly sealed container.
  4. Refrigerate until firm.
Notes
  1. If you make your own Garlic Butter, it will last for up to one week in the refrigerator. Store tightly in plastic wrap or a sealed container.

Crawfish Étouffée over Baked Cajun Catfish

Crawfish Etouffee over Baked Cajun Catfish

Etouffee
  1. 1/3 cup of vegetable oil
  2. 1/3 cup of flour (all purpose)
  3. Trinity (1/2 green 1/2 red bell peppers, 1 yellow onion, 1 celery stalk) finely chopped
  4. 1-2lbs of frozen crawfish tails (thawed) reserve fat
  5. 2 cups of water
  6. 2 chicken bouillon cubes
  7. 1 tablespoon of Liquid crab boil
  8. Cajun spices (I used Tony's)
  9. Green onions
Catfish
  1. 4 Catfish filets
  2. 2 tablespoons Tony's
  3. 1 tablespoon each of Onion powder, Accent, Garlic & Herb Mrs. Dash, and Parsley Flakes
  4. Juice from 1/2 a lemon
  5. 2 tablespoons of melted butter
Etouffee
  1. Heat oil
  2. Whisk in flour slowly
  3. Add spices
  4. Continue whisking on medium heat until roux is a peanut butter color
  5. Add veggies
  6. Saute until translucent; 5-7 mins
  7. Pour in crawfish fat, crab boil, and water
  8. Bring to a simmer
  9. Add the remaining water and bouillon cubes
  10. Simmer for 20 mins
  11. Taste and adjust seasoning
  12. Add crawfish tails
  13. Simmer for 5 mins.
Catfish
  1. Preheat oven to 375
  2. Dry fish with paper towels
  3. Rub with seasoning
  4. Pour on lemon juice and butter
  5. Top with lemons
  6. Bake for 20 mins.
  7. Enjoy!

Chicken Cordon Bleu (Cajun Style)

Chicken Cordon Bleu is perfect as it is. Elegant and delicious! But, in true Coop fashion, I added a slight Cajun twist. Incorporating a few Cajun spices woke that chicken up! This is my take on a wonderful, French classic! Check out my YouTube video for this recipe. Here, you’ll see step by step instructions. Don’t be intimidated by the fancy title. This entree was a breeze! It was also a lot of fun to make.


You MUST have thin chicken breast, so break out the mallet, Cover the bird with plastic wrap, and beat it like it back talked you or owes you $$ whatever works. Wait, preheat your oven to like 350.. Whatever feels safe. Ok now back to the ? season it.Here’s where my Cajun twist comes in. Add those Cajun spices! Yum

Now grab a slice of ham. Any kind except honey! No sweet meat today! Now a slice of cheese. I used Gruyere because it made me feel special that day, but Swiss works! Roll the chicken and let him chill in the fridge for awhile.

Take him out after 15-20 mins. Throw way that plastic wrap. We can’t eat that, boo! Now, secure him with toothpicks if it’s being a jerk and unrolling.

Plate some breadcrumbs and season it with salt, pepper, onion & garlic powder. Then put an egg and some milk in a bowl (egg wash!) Now, roll that guy in some flour, dip in egg, then breadcrumbs.

Take him over to the stove that should have a hot skillet with a lil oil in it waiting for him, because I mentioned that earlier right? ? Brown ALL four sides of this guy. Then, place him in a greased dish (or leave it in the skillet if it’s an oven safe one) and bake for 15-20 mins or however long it takes until he’s no longer pink inside. But don’t over cook!

Now, I’ll be honest. This sauce was an accident that ended up making sense (story of my life??) But, it’s honestly soooo yummy! So, don’t skip it!

Instructions
Chicken
  1. Pound out chicken using a mallet or meat tenderizer between two sheets of plastic wrap.

  2. Season both sides with Cajun spices.

  3. Spread on the Dijon mustard and layer 1 slice of ham and 1 slice of cheese.

  4. Roll tightly with the plastic wrap.

  5. Continue with each breast then refrigerate for 15-20 mins.

Breading
  1. Set up a breading station with 3 different bowls. One for the flour, egg mixture(whisk milk and eggs together), and breadcrumbs.

  2. Remove chicken from the refrigerator and discard plastic wrap, Secure each roll with toothpicks to prevent unrolling.

  3. Dredge each roll in the flour, then egg mixture, and lastly the breadcrumbs,

  4. Allow the chicken to rest while you heat the oil in an oven safe skillet.

Frying
  1. Heat the oil until it sizzles when a small amount of flour is sprinkled into the skillet

  2. Preheat your oven to 350 degrees F.

  3. Fry each chicken cordon bleu for 3-4 mins per side.

  4. Transfer skillet to the oven for 12-15 mins or until chicken reaches 165 degrees internal temp.

  5. Allow to rest for 5-10 mins before slicing.

Sauce
  1. Melt butter and saute garlic for 1 min.

  2. Pour in the heavy cream and bring to a simmer.

  3. Add cheeses.

  4. Simmer until cheese melts completely.

  5. Taste and adjust seasoning. Add salt and pepper as needed.

  6. Toss in some fresh chopped basil and parsley.

  7. Enjoy!!
