– 2 celery stalks, chopped
– 3 garlic cloves, minced

– 1 tsp paprika
– 1/2 tsp cayenne pepper (optional)

3. Combine Ingredients: Add the soaked black-eyed peas, chicken broth, water, and ham hock (or bacon) to the pot. Stir in thyme, paprika, and cayenne pepper if using.
4. Cook the Peas: Bring to a boil, then reduce the heat and let it simmer uncovered for about 1.5 to 2 hours, or until the peas are tender. Stir occasionally and add more water if needed.
5. Finish and Serve: Remove the ham hock, shred the meat, and return it to the pot. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.

Tips for the Best Creamy Black-Eyed Peas
– Soaking is Key: Soaking the peas reduces cooking time and helps achieve a creamier texture.
– Flavor Boost: Use smoked meat like ham hock or bacon for a deep, smoky flavor.
– Consistency Control: For extra creaminess, mash some of the peas against the side of the pot before serving.
What to Serve with Creamy Black-Eyed Peas
These black-eyed peas are versatile and pair well with a variety of dishes:
– Cornbread: Classic and comforting.
– Rice: Serve over white or brown rice for a complete meal.
– Greens: Collard greens or sautéed spinach make great sides.

January 1, 2021 at 10:28 amI have just within the past few years cooked for new years the traditional southern black-eyed peas, cabbage, yams and etc. For black eyed peas I have done crock pot, slow cooker, pressure cooker, and this year in a stock pot. It was so easy, and they were so creamy! This is a great recipe, and will now be the new “go to”.
