The Best Rotel Dip EVER Recipe
The creamiest and best rotel dip you’ll ever make! Ground meat, 3 cheeses, and tons of flavor.
Ingredients
- 1 lb ground beef or sausage
- 1/2 onion finely diced
- 1 packet taco seasoning
- 1/2 cup water
- 16 oz Velveeta cheese cubed
- 4 oz Monterey Jack cheese cubed
- 8 oz cream cheese cubed
- 10 oz rotel tomatoes
- 10.5 oz cream of mushroom soup
- 1/3 cup chopped green onions
- 2 TBS chopped cilantro
- 1 Roma tomato chopped
Instructions
-
Preheat oven to 375°F
-
Brown meat and onions in a skillet
-
Drain off grease
-
Add the taco seasoning and water
-
Stir and cook until water has evaporated
-
In a baking dish, add all remaining ingredients except Roma tomatoes.
-
Bake for 25-30 mins or until cheese has melted. (CROCKPOT: if you’d like to use a slow cooker instead of baking, cook on low for 2 hours)
-
Stir well
-
Top with more green onions, cilantro, and Roma tomatoes if desired.
-
Enjoy!
Recipe Notes
*If dip is too thick, add milk gradually until the desired consistency is reached.

November 19, 2020 at 5:02 pmMy husband & I enjoyed this Rotel dip. I used 1 pound ground chicken because it’s what I had on hand. I would like it to be meaty in the the future so I plan to use 2 pounds next time. Thank you for sharing Coop!
