Ingredients:

Seasoning Blend:

– 1 tsp onion powder

– 1/3 tsp white pepper

– 1/2 tsp salt

– 1 tsp Herbs de Provence

Stuffing:

– 6 oz cream cheese (softened)

– 1 bulb garlic (roasted)

– 1/2 tsp seasoning blend (from above)

– 1 tbsp chopped parsley

– 1/2 tsp chopped rosemary

Turkey Breast:

– 2-3 lbs boneless turkey breast

– 1 bulb garlic

– 1 tbsp unsalted butter

– 1/2 tsp salt

– 2 tbsp bacon grease

– 2 tsp extra virgin olive oil

– Remaining seasoning blend (from above)

– Kitchen twine

Directions:

Preparing the Seasoning Blend

First things first, let’s mix up our seasoning blend. Combine the onion powder, white pepper, salt, and Herbs de Provence in a small bowl. Set this aside for now – we’ll use it in both our stuffing and on the turkey breast.

Making the Stuffing

1. Roast the Garlic:Preheat your air fryer. Cut off the top quarter of the garlic bulb, drizzle it with salt, and place it in a piece of aluminum foil. Add a tablespoon of unsalted butter and a drizzle of olive oil over the bulb. Wrap the foil around the garlic and air fry at 380°F for 15-20 minutes. Allow the garlic to cool until it’s safe to handle.

2. Prepare the Stuffing: In a mixing bowl, squeeze out the roasted garlic cloves. Add the softened cream cheese, chopped parsley, chopped rosemary, and 1/2 tsp of the seasoning blend. Mix everything until well combined. Set aside.

Preparing the Turkey Breast

1. Butterfly the Turkey Breast: Thaw your turkey breast according to the package instructions. Butterfly the breast by slicing it horizontally, but don’t cut all the way through. Open it like a book, then place it between two layers of plastic wrap. Use a meat mallet to pound it to about 1/4 inch thickness.

2. Stuff the Turkey: Spread the prepared stuffing evenly over the turkey breast, leaving about a 1/2 inch border around the edges. Roll the breast up tightly, starting from one of the short ends. Secure the roll with kitchen twine, tying it at 1-inch intervals.

3. Season and Sear: In a small bowl, mix the remaining seasoning blend with 2 teaspoons of olive oil. Rub this mixture evenly over the stuffed turkey breast. Heat the bacon grease in a large skillet over medium-high heat. Sear the turkey breast on all sides until golden brown, about 1-2 minutes per side.

4. Roast the Turkey: Preheat your oven to 325°F. Place the seared turkey breast in an uncovered roasting pan. Roast in the oven for about 50 minutes, or until the internal temperature reaches 165°F.

5. Rest and Serve: Once the turkey is done, remove it from the oven and let it rest for 20 minutes. This step is crucial for keeping the meat juicy. Slice and serve your beautifully roasted garlic stuffed turkey breast, and enjoy the compliments from your delighted guests!

Tips for the Perfect Turkey Breast

Butterfly with Care: Be gentle when butterflying the turkey to avoid tearing the meat.

Even Stuffing: Ensure an even layer of stuffing to avoid any leaks while rolling.

Secure Well: Don’t skip the kitchen twine; it helps maintain the shape and keep the stuffing intact.

This Roasted Garlic Stuffed Turkey Breast is a game-changer for any festive table. Pair it with your favorite sides, and you’ve got a feast to remember.

Happy cooking!
