Ingredients
Seasoning Blend:
1tsponion powder
1/3tspwhite pepper
1/2tspsalt
1tspHerbs de Provence
Stuffing:
6ozcream cheesesoftened
Roasted garlic
1/2tspseasoning blend
1tbspchopped parsley
1/2tspchopped rosemary
Turkey Breast:
2-3lbsboneless turkey breast
1bulb garlic
1tbspunsalted butter
1/2tspsalt
2tbspbacon grease
2tspextra virgin olive oil
Remaining seasoning blend
Kitchen twine
Instructions
Seasoning Blend:
Mix all ingredients together; set aside
Stuffing:
Preheat air fryer
Cut 1/4 of the top of the garlic bulb and place in into aluminum foil
Sprinkle on the salt
Top the garlic with the butter and olive oil
Enclose the garlic with the foil
Air fryer on 380 for 15-20 mins
Allow the garlic to cool to touch
Add the cream cheese into a mixing bowl
Squeeze the garlic into the bowl
Add in the remaining ingredients; mix well
Set aside
Turkey Breast:
Thaw the breast according to package instructions.
Butterfly the breast, place it between two layers of plastic wrap, and use a meat mallet to pound the breast into 1/4 inch thickness
Spread the stuffing evenly in the center of the breast; avoid 1/2 inch of the edges
Roll the breast around the stuffing; tie and secure with kitchen twine.
In a small bowl, combine the remaining seasoning blend and the olive oil
Rub the mixture evenly over the stuffed turkey breast.
Heat the bacon grease in a pan
Sear the breast on each side; about 1-2 mins per side
Place the breast on in an uncovered roasting pan and bake for 50 mins or until the internal temperature reaches 165°F
