Ingredients

Seasoning Blend:

  • 1 tsp onion powder
  • 1/3 tsp white pepper
  • 1/2 tsp salt
  • 1 tsp Herbs de Provence

Stuffing:

  • 6 oz cream cheese softened
  • Roasted garlic
  • 1/2 tsp seasoning blend
  • 1 tbsp chopped parsley
  • 1/2 tsp chopped rosemary

Turkey Breast:

  • 2-3 lbs boneless turkey breast
  • 1 bulb garlic
  • 1 tbsp unsalted butter
  • 1/2 tsp salt
  • 2 tbsp bacon grease
  • 2 tsp extra virgin olive oil
  • Remaining seasoning blend
  • Kitchen twine

Instructions

Seasoning Blend:

  1. Mix all ingredients together; set aside

Stuffing:

  1. Preheat air fryer
  2. Cut 1/4 of the top of the garlic bulb and place in into aluminum foil
  3. Sprinkle on the salt
  4. Top the garlic with the butter and olive oil
  5. Enclose the garlic with the foil
  6. Air fryer on 380 for 15-20 mins
  7. Allow the garlic to cool to touch
  8. Add the cream cheese into a mixing bowl
  9. Squeeze the garlic into the bowl
  10. Add in the remaining ingredients; mix well
  11. Set aside

Turkey Breast:

  1. Thaw the breast according to package instructions.
  2. Butterfly the breast, place it between two layers of plastic wrap, and use a meat mallet to pound the breast into 1/4 inch thickness
  3. Spread the stuffing evenly in the center of the breast; avoid 1/2 inch of the edges
  4. Roll the breast around the stuffing; tie and secure with kitchen twine.
  5. In a small bowl, combine the remaining seasoning blend and the olive oil
  6. Rub the mixture evenly over the stuffed turkey breast.
  7. Heat the bacon grease in a pan
  8. Sear the breast on each side; about 1-2 mins per side
  9. Place the breast on in an uncovered roasting pan and bake for 50 mins or until the internal temperature reaches 165°F
  10. Rest for 20 mins before serving.
