Ingredients
2lbsboneless chicken breast or thighs
1cupfull fat plain Greek yogurt
1packet or 1 tsp Goya Sazon
1tspgarlic powder
1tspsmoked paprika
2tsppoultry seasoning
1TBSPchopped parsley
1/2tsplemon juice
2tspolive oil
Coarse salt to taste
Instructions
Slice the chicken into 2-3 inch pieces; set aside
In a mixing bowl, combine all remaining ingredients, stir well.
Taste the mixture and adjust seasoning as desired.
Add in the chicken pieces and toss well to coat evenly.
Cover with play wrap and refrigerate overnight.
Preheat the oven to 400°F
Add 4-5 pieces of chicken to each skewer*
Place the skewers on a baking sheet with a wired rack.
Bake, uncovered, for 10 mins.
Flip each skewer over and continue baking for another 8-10 minutes or until the internal temperature the chicken reaches 165°F
Serve with your choice of sides.
