  • * ½ cup butter
  • * ½ cup all-purpose flour
  • * 1 medium onion diced
  • * 1 bell pepper diced
  • * 2 celery ribs diced
  • * 3 garlic cloves minced
  • * 1 tablespoon tomato paste
  • * 2½–3 cups warm gumbo crab stock
  • * 1 teaspoon Cajun seasoning plus more to taste
  • * ½ teaspoon black pepper
  • * Cayenne pepper to taste
  • * 1 bay leaf
  • * 1 teaspoon Worcestershire sauce optional

  • * Hot cooked rice for serving
  • * Optional: 2–3 additional gumbo crabs rinsed and cracked

Instructions

Instructions

  1. Heat oil in a stockpot over medium heat. Sauté the cracked gumbo crabs for 3–4 minutes. Add the onion, celery, bell pepper, and garlic; cook for 2 minutes.
  2. Add the wine or brandy and scrape up the browned bits. Simmer until reduced by about half.
  3. Add 8 cups of water, the bay leaf, and parsley stems. Simmer gently, uncovered, for 30–40 minutes. Strain and discard the stock crabs.
  4. Melt butter in a heavy pot over medium heat. Whisk in flour and cook, stirring often, until light brown, about 8–12 minutes.
  5. Stir in the onion, bell pepper, and celery. Cook until softened, 6–8 minutes. Add garlic and cook for 30 seconds.
  6. Stir in tomato paste and cook for 1–2 minutes.
  7. Slowly whisk in 2½ cups of warm crab stock. Add Cajun seasoning, black pepper, cayenne, bay leaf, and Worcestershire sauce, if using. Add optional gumbo crabs.
  8. Simmer gently for about 20 minutes, stirring occasionally. Add more stock if needed.
  9. Fold in the picked crabmeat and simmer for 5–7 minutes, until heated through. Taste and adjust the seasoning.
  10. Remove the bay leaf. Garnish with green onions and parsley, and serve over rice.

Recipe Notes

Recipe notes: Use dry white wine for a brighter stock or brandy for a richer flavor. Season the étouffée at the end, since the crabmeat and Cajun seasoning may already be salty.
