Preheat to 350°F

Grease and line two 9 inch cake pans with parchment paper. Set aside.

In a large mixing bowl sift the flour, sugar, baking powder, baking soda, and salt together.

Whisk well to combine.

Add the buttermilk, eggs, vegetable oil, and vanilla extract.

Whisk and stir until combined. Do NOT over mix the batter.

Use a spatula to fold in the coffee.

Pour the batter evenly into the baking pans.

Bake for 30-35 mins or until a toothpick inserted into the center of each cake comes out clean.

Place on a wired baking rack to cool.
